New phone setup

I already setup my new iPhone and didn’t have the most recent cloud backup so my watch and health data didn’t transfer. How do I go back and fix that after my new phone is already setup with everything else?

Transferring to new iPhone I cannot find my iPhone XS backup in my iCloud. I want to be sure the phone IS backed up so I can transfer everything on phone to a new iPhone. Logging on to iCloud I only see info from my Mac - but supposedly my watch & iPad as well as the phone are being backed up to the cloud. I can't find any backup for these devices, although they are listed as devices under the settings. How can I be assured everything on phone gets to new phone?

You erase the phone and start over restoring from the correct backup.
