Do you have to install Catalina on your Mac before you can update your iPhone using the computer?

No.

It only determines whether you use "Finder" (new macOS) or "iTunes" (on older macOS).

Using iPhone 7 with OS 10.15.7 Catalina Plugged in iPhone 7 version 14.4 to desktop iMac. Got message a software update is needed. But it doesn't say what software that is. If it's a simple software upgrade, OK. But if it's Big Sur, no. And why would I need that anyway for this relatively older but up to date iPhone?
