So if I were to get 50 gb, would I get only that for the one purchase and pay monthly? Or am I buying another 50gb every month?

If I buy the monthly plan of 50gb, would I get just the 50 and pay monthly? Or would I get 50gb every month and pay monthly?

If I’m buying just the one month worth of 50gb, could I pay one month and then cut off the plan without losing my data?

You had it right the first time. You purchase 50GB of iCloud storage and pay for it monthly to retain it. When you stop paying then you lose that iCloud storage space at that time.
