Just updated to to os 11 on iMac and cannot find a junk folder in the latest Mail layout
How do I reinstate a Junk folder that has disappeared from the new layout of Mail now that I have upgraded to Big Sur?

Unless you put it in Favorites, it will be in the account section.
You can add Trash and Junk folders individually to Favorites, or you can add the All Trash and All Junk unified mailboxes.
Use the + button that appears when you hover over the right side of the Favorites header in the Mailbox list.
You can also ctrl-click on a mailbox to add it to the Favorites.
Essentially, Apple is letting you store whatever mailboxes you want at the top of the Mailbox list. Those also appear in the Favorites bar, if you have that enabled.
