How do I pair my watch without resetting it to my new phone

You must erase your Apple Watch before you can pair it to a new iPhone. On the Watch, Settings, General, Reset.


However, if you had your iPhone backed up to iCloud you might get lucky. When I had to make an emergency replacement of my iPhone I found the setup process found the Watch in the restored backup and offered to set it up. 40 minutes later I had everything set up and working.
