Hey, I have an iPhone 7 and I bought the iPhone 12 Pro.

can I just place my current sim in my new device, or do I need a new one from my carrier?

That depends on the carrier. Carriers that do not provide the 5G experience work with the old SIM. Carrier that do support 5G may require you to use their new 5G SIM. One quick call to the carrier will solve this issue.

You can always install your old SIM in your iPhone 12 Pro and see if it works. It may work however it may limit you to 4G LTE.
