will my iPad 7th generation fast charge if I use an 18w usb type c charge instead of the default 10 W charger?

iPad7 does not support USB-PD (Power Delivery) Fast Charging - as such, will not significantly benefit from using an 18W Power Adapter.
Your iPad will, however, be able to charge at its maximum supported rate of 12W (2.4A @5V).
