Your iPad has an encrypted file system; all data “at rest” is encrypted.
The encryption key that is needed to access data on your iPad is stored in the Secure Enclave - this being the security processor of your iPad. The Secure Enclave is logically separated from the rest of the system; it securely stores all the cryptographic keys that are used by your iPad.
When you enter your passcode, the Secure Enclave is unlocked - and in so doing the crypto’ keys needed to access data on the iPad are released to the Operating system. If the system is erased, all crypto’ keys stored within the Secure Enclave are destroyed. Without the crypto’ keys, none of the data on the iPad can be recovered; a forensic recovery, if attempted, can only recover random data.
This process is known as a crypto’ erase. All data is rendered unrecoverable.
The best way to erase an iPad is to follow this procedure:

This process completely erase the device and removes the Activation Lock - in readiness for a new User.
The iPad can also be completely erase from Settings - although this process alone does not remove the Activation Lock:
Settings > General > Reset > Erase All Content & Settings

There is nothing of yours left on the device if you reset it.
If you power it on the screen should say Hello and be ready for the next user.
Thank you. Can you point me somewhere that provides a tad more explanation? I'm not questioning you, but the wife isn't convinced. She thinks there are hackers everywhere waiting to pounce on stuff like this.
