Books on ipad show two pages

Yup,

Switch your iPad to landscape orientation.

If your iPad is running iPadOS and your screen rotation is locked, from the Home screen, swipe a finger downward from the upper right hand corner to bring down the iPadOS Control Panel look for a white icon square with a red circular arrow with a red padlock symbol in the middle.

Tap this icon to release the screen rotation lock and now you can rotate your iPad's screen into landscape orientation and read your Apple Books two pages at a time.
