Actually, none of the things you specifically mention are part of an iCloud backup, except photos and then only if NOT using iCloud photo to synchronize photos across devices.


iCloud email is stored in Apple’s email servers. Other email accounts are saved on the email service providers servers. Contacts and notes are synchronized across devices using iCloud, so are not part of an iCloud backup.


What most people backup with an iCloud backup is app specific data. You can see what app’s data is being backed up in settings (see “manage your iCloud backup” in Manage your iCloud storage - Apple Support).
