How can I tell my PC to direct the iPhone backup onto an external storage system? When I try the backup process, it automatically backs up everything onto the C: drive which has limited space. Anyone?

you can mount the external storage as the dir itunes backup to
Locate backups of your iPhone, iPad, and iPod touch - Apple Support
and then mout your stroage as that dir
