I have new music on my Mac that I would like to sync to my iPhone. When I connect them I get a message to upgrade my Mac in order to be able to sync. I tried Big Sur and it was so hard on my eyes I went back to Catalina.
iMac 27″, macOS 10.15
The first message is what pops up when I connect my phone to my Mac. The 2nd is what shows after I click on the Learn More button. The third is my updates options on my Mac, which only has Big Sur as available updates.
You can safely click the Install link in your first image. This is effectively installing a driver. It won't install Big Sur.

Please post the exact text of the message. Perhaps Music/Finder need a patch to talk to your iPhone, rather than you needing to upgrade the OS.
