As a fellow owner of dual, thunderbolt LG monitors; this lack of capability would have been grounds for me to exercise Apple’s 14-day return policy.

Unfortunately, your M1 laptop only natively supports a single external display.
A quick search found numerous claimed technical solutions (workarounds) but I can’t vouch for their functionality.
