Why is my storage full when I have off loaded apps and even deleted apps? I never had this issue before the last few software updates!

Did you restart the phone after each deletion? Unfortunately, the only way to gain space is by deleting photos, messages, apps, etc.. Be sure to save important photos and data to your computer or an external drive. Check out this video...
