Hi ! I recently bought the iPad Pro gen 5 and I can't add any widgets on to my home screen.

If that is a brand new 2021 iPad Pro that has iPadOS 15, that Home scteen combo widgets/apps screen feature IS GONE in iPadOS 15.
Widgets are flexible and dynamic, now, and can be placed anywhere on any Home screen and you can even have duplicate widgets on other Home screens.
