What do I do if I plug it in and all that happens is the apple logo comes on the screen

If the battery was completely drained. It might take awhile before the logo goes away. Otherwise take it off the charger and restart it: Press and hold both the side button and Digital Crown for at least 10 seconds, or until you see the Apple logo.
