Hi,
If you have already completed the iOS Setup Assistant/hello screen that appears upon activating a new device, you would need to erase all content and settings in order to set the device up as new again.
You will see the iOS Setup Assistant again after the device restarts, and can then choose how to you would like to restore apps and data. This includes QuickStart, restoring from an iCloud backup, or syncing from iTunes on a Mac or PC.
Hope this helps.
