Back Up iCloud:

You will lose whatever is not downloaded. So, as long as you download it all first, nothing will be lost. So, I'd urge you to download them to a computer, and then on to a hard drive. Using a computer would be more user-friendly. Getting Back Files:

Manually transfer things into it. Using a computer, you upload them to iCloud, You'd access iCloud through Safari at this link: https://www.icloud.com/iclouddrive, and then dragging-&-dropping things into it.

As for the Applications:

Contact the developer, or download it from the App Store, installing it once more.
