How do I update my credit card expiration date.
Remove and readd the card. If needed, put in another one temporarily or contact the iTunes Store staff.

Try adding the card again using the new expiration date. If you can do that, then promote the newly added card to be the primary payment method.
If that doesn't work, as Niel posted, contact iTunes Support using the link Niel posted.
It will not let me remove my card, so I can reinstall it.
