Can someone help?

After upgrading my apple watch to one with a cellular plan I am having problems with my notifications on my watch series 6. It keeps showing unread messages even when I've read them on my phone and it even considers new ones that I send as unread messages. On a sidenote, I never had this issue when I didn't have the watch without the cellular plan

I have restarted both, I have made sure mirror my iPhone is on & still nothing stops them from needing to be opened additionally

When you unpair, then re-pair your Apple Watch, it shouldn't be to a restore backup. It should be to whatever information or data was with your OS at the time.
