I’ve added a new card that I only want to use for some (existing) apps on my iPhone but don’t want to change my default card. How do I edit payment details on an individual app to change the payment type?

You can't, except by manually reordering the methods or moving those applications to a Family Sharing subaccount and redeeming gift cards into the organizer's one.
