lost phone and want to pair watch without losing all info from wwatch

lost paired phone and have replaced with new. How do I pair my watch with the new phone without losing all info/texts etc. Lost phone was not on iCloud but watch is now and so is new phone

Start here;

Setup your Watch to a new iPhone

And start at the section "If you have lost or erased your old phone".
