I have a late-2014 iMac 27" Retina 5K. The computer is past the point of being able to manage th latest MacOS, but the monitor appears to be fine. Can I use it as a monitor with an iMac mini, or am I better off getting the there new 27" Studio display?

Sell it, trade it, or donate it to a group that needs a computer or give it the children or relatives and buy a new, separate display.
Besides the fact that it cannot work as a monitor, it would draw much more power than modern external displays there by being energy wasteful.

No. Mid-2014 or earlier running High Sierra. So get a real external display for your Mac mini — I purchased a 32-in 4K HDR LG (HDMI) for mine, and have not looked back.
you need not get a studio display you should be able to use just about any computer monitor
