What to do to erase the internal HDD of my iMac and install El Capitan OS ??

Restart with the Command and R keys held down, use the Disk Utility to erase the internal drive, and then install El Capitan.

If the computer's running Lion through Yosemite, you'll need to either install that OS first and then get El Capitan from Apple's servers, or create an installation thumbdrive.

If the computer's running Snow Leopard or earlier, you'll need to use a DVD instead of the recovery system.
