Turn off iCloud and then do the following steps in What to do before you sell, give away, or trade in your Mac.
The real question here is why in the world would you want to do what you are proposing?

Go to the System/Apple ID/iCloud preference pane and turn of iCloud Drive.
If you have iCloud Photos enabled launch Photos, go to the Photos/iCloud preference pane and disable iCloud Library.

I am giving my old IMAC away and have other Apple devices that access the folders on the ICLOUD
I don't see an option to turn off ICOUD?
