Hold the numeric “dash/minus” key and then select which of the three dashes (i.e. Hyphen, En, or Em) you desire to insert.
Example:

While I don’t have the answer for you (other than that your particular software is “mis-interpreting” your keystroke intent on your behalf) …
… here is some detail on the actual terminology of the subject; which will hopefully help you get to an answer.
FYI, there are actually THREE types of “dashes”
(I discovered this while troubleshooting a control system malfunction caused by using the wrong “flavor” of dash in the underlying code)
I suggest that you contact Google support team about that.
