I want an Apple Watch for a 10 years old boy so I can track him when he is out of home. Also, I want these features to be included: waterproof and school mode (for example an application for parents to freeze the games). May I know what Apple Watch do you recommend?

There is no specific Apple Watch made for kids.
All currently sold models are Water Resistant (not water proof) to varying degrees and can be set to school time using Parental restrictions and Screen Time.
