Unable to access Auto-Lock as it is greyed out and stuck on 30 seconds. What do I do to make it active?

Auto-Lock is greyed out because your probably have Low Power Mode set to ON.

Note that the low power mode is designed to boost the battery life of your device. So, the Auto-Lock Mode will lock your iPhone on the lowest possible period, which is 30 seconds. So, once the mode is turned on, you will see that the auto lock greyed out on your iPhone.

You can set the Low Power Mode to OFF and then you will be able to choose other options for Auto-Lock.
