As long as you take the precaution of backing up to Apple iCloud AND/OR to a newer Mac using the macOS Finder or an older Mac or Windows PC with the latest version of iTunes installed, then data loss will be of minimal risk.
Any computer software upgrade/update brings with it some risk to data and/or the functionality of the device.
A data backup is an insurance policy against any possibility of data losss.
If you just wish to do the iOS/iPadOS upgrade/update, without the safety of a device data backup, then you can do that, but know that there is always a small percentage of risk of something going wrong with any computet/mobile device OS upgrade/update.
Nothing in this world/life is 100%
The choice, of course, is yours to make.
