Why is the order of my notes randomly changing?

Since the iPadOS 16.1 update (iPad 7th Gen), the Notes app doesn't allow me to control the order of my notes. Prior to this change, I could order my notes as I preferred to. Now, there is no logical order at all and it keeps changing randomly every day, according to parameters that are set, fixed and limited to criteria that I don't want to use. I cannot change or delete these controls.

iPad, iPadOS 16

Along with other Apple Apps, Notes in iOS/iPadOS16.x has been updated - bringing some changes and new functionality.

The sequence of your Notes will vary between the views that you choose from the Notes sidebar…

When viewing the All iCloud category, your Notes will be sequenced by order of date of creation or modification - the most recent being at the top of the list. In this view, the sequenced notes will appear in blocks - Last 7 days, Last 30 Days, then by calendar month, and finally by previous years.

By contrast, selecting the Notes or other user-created folder, you can selectively Sort or Group your Notes. Having selected the Category/folder from the Sidebar, tap the ellipsis (“…”) button that you’ll see at top-right of the list of Notes; this will expose an options menu, from where you can select your Sorting and Group from available options.

Thanks. I have used that option before, but I wasn't sure how to proceed beyond selecting notes. I don't want to delete anything. In fact, I don't want anything to be changed at all. That is what is so annoying about this. I just want my notes to remain the way I had them and I don't want the app making any changes to them.
