I can start up a document with different tabs,
but when i close the document than all the tabs are falling apart.
My question: is it possible that they stay separate tabs when closing te document?

No. When you close a Pages window comprised of separate document tabs via the title bar red traffic light, all tabs are undone, their respective files are saved/closed, the document window disappears, and Pages remains active in the Dock. Pages retains no memory of those tabs, but does list their respective documents in the Open Recent menu.
Without using the red traffic light, your document closing is constrained to the following File menu choices:
