Your device will update to the highest version currently available that it will support. Only iOS 15.7.3 is currently available for an iPhone 6s

Updating an iPhone 6s:

Update Using a Computer:

Have a Computer Handy? If so, try using a computer to update. Go here: Update your iPhone Using a Computer - User Tip. If any updates are availabe, they will install, sure enough.

An iPhone 6s isn't capable of 16 or above. To install 15.7.3, use a computer or the Software Update function in Settings.
