Changing my Apple ID …I can’t get into the email attached to my Apple ID so shouldn’t I change my id altogether?

If you did it as instructed in this article Change your Apple ID - Apple Support

then you may need to restart things to get it to take a fresh look as in: What to do after you change your Apple ID or password - Apple Support
