I have had my apple tv and homepod for two to three years. While I have enjoyed them, I just haven't got as much use out of them as I would like to. I was wondering if I turn them into an apple store if I could get credit to put towards and apple watch or money back.

Unfortunately, no. They (HomePods and Apple TVs) are considered "Other Products" so you don't get anything back from it. But, Apple will recycle them for free. I just learned this, but you can take any computer, monitor, mouse, printer, etc. into Apple and they will recycle it for free as well. Look here: Free recycling - Apple
Since it looks like that you want to get more of a discount for a new Apple Watch, Apple sells refurbished Apple Watch Series 8s (but they are not the latest ones) at a discounted price of at least $60. Amazon also has refurbished Apple Watch Series 8s (again, not the latest ones) for over $100 discounts.

No. Apple TVs and Homepods are only acceptable for recylcing. Apple offers no value for them.
Sell them on Ebay or similar online store instead.
