I've bought an iPad 8 for school and I'd like to use a different operating system as iOs doesn't really allow you to use software from outside of the AppStore. I've looked into sideloading for iOs but it seems quite limited.

Your iPad is only capable of running iPadOS. Outside of centrally Enterprise and Educational establishments, where other sources of software may be available, compatible Apps for iOS/iPadOS are only available from the Apple App Store.
