I'd like to customize the Finder Share menu option to default to Mail, not Message. Any ideas?

FWIW, there is no "default" in the Share Menu. You choose the option you prefer from the menu. If you haven't done so already, see the link leroy posted.

Here is one simple Automator workflow that takes whatever is selected in Finder, and creates a new Mail message with the selected files attached. You can even add customized subject and message text if you want to.
Just create a new Automator document, choose "Quick Action", fill it like this and name it - for example,
"Attach to New Mail". To use, select files, Control-click and choose from the contextual menu.
To add a keyboard shortcut, go to System Settings->Keyboard->Keyboard Shortcuts->Services, add the name of your quick action, and choose the desired shortcut.

How about pressing a designated keyboard shortcut and have the files already attached to a new Mail message, ready to go?
This is easy if you just make a small shortcut in Shortcuts or quick action in Automator. If this is something that you want often, it is well worth it.
This sounds super efficient (once set up) but complicated and I'm not good at even some basic mac customization tasks. Can you please point me toward good resources for things like this?

On Sonoma 14.1, one can change the order of certain Share items by pressing and holding the ⌘-key and dragging the Share item icon to the preferred position. Mail, AirDrop, and Messages allow this, and others did not.
Unfortunately, one cannot reorder Quick Actions in Extensions : Finder using the same approach.
