Go to File > Print to enter print mode and click in one of three boxes in the footer so that the cursor is flashing.
The page Number should already be in the box. If the cursor is not already just behind the page number move it there by clicking in that spot.
Type a space followed by "of" followed by space.
Then with the cursor still in the box use the Insert menu to insert 'Page Count'.
Click 'Done' or 'Print'
