erase device from icloud
If I delete a erase from iCloud, and the device is backed up and all the files I need are in the cloud, will they remain there even after the device is deleted?

Assuming that you mean “Erase this Device” using web-based FindMy, then yes …
… anything you have saved, sync’d, or backed-up to your AppleID’s iCloud will remain on iCloud and be available to restore onto a new/replacement device.
That said, if your device is protected by a truly secure passcode — known only to you and not easily guessed — the data on your phone is already encrypted and inaccessible by anyone w/o the passcode.
While erasing the phone might make us “feel better”, pragmatically-speaking, it does little to make your on-device data any “more secure.”
