I use my phone for a company email and my company is telling me my iPhone 8 is not compliant and I need to update to iOS 17, but iOS 17 is not available on this device when I try to check the software update

Because you have an outdated iphone that isn't compatible with ios 17 iPhone models compatible with iOS 17 - Apple Support.
You'll need to upgrade to one of the devices provided in the link I posted.
