Stuck on updating apple watch se 2 to activate it

I bought today an apple watch se 2, i paired it with the phone and is forcing me to update to watch os 11.1. The problem is that is taking 2/3 hours but when i have 1 hour left is reseting the update bar progress and time to 2 hours. Is stuck like this for 5 hours. NO my wifi is not the problem, i updated the phone in almost 30 seconds (1.6gb)
