So I found this old Apple Watch in my kids playroom and I wanted to connect it. I went to the the Apple Watch App and tried to connect it but…(.) It said I need internet connection to complete the software update and I can’t connect. I have to pair it to get Wi-Fi so I don’t know what to do. So tell me what to do.

What’s the history here? A found Watch? Found one of yours or of your scion’s, or found somebody else’s Watch?
The watch won’t be useful without the Apple Account credentials associated with Activation Lock. Do you have the credentials?
If it was your or your scion’s Watch and recently found and won’t connect, try a reset:
You might need to follow the no-longer-have-the-paired-iPhone path in that article.
Reset will not clear Activation Lock. Only the credentials or the original purchase receipt can clear that.
