IOS 18.0.1 Wasn't showing sunrise or sunset times. Editing the face, it showed no complication where sunrise/sunset was. I put another complication there then tried to replace it with sunrise/sunset only to find the complication isn't on the menu anymore.

Apple changed the available Watch faces and options for the complications in the newest watchOS 11 update.
The Apple Watch User Guide for watchOS 11 lists only these watch faces and their available complications:
