If this is an 27" Apple Thunderbolt Display (model A1407), whose hydra cable has two heads, it sounds like the problem is that you used the wrong adapters.
This display requires Thunderbolt input – so the the appropriate adapter is the Apple Thunderbolt 3 (USB-C) to Thunderbolt 2 Adapter .
I am guessing that your "USB-C to Thunderbolt 2" adapter is really a USB-C to Mini DisplayPort adapter, and so while the physical connectors would fit, it would produce the wrong type of signal. With the two adapters you're calling "Mini DisplayPort to HDMI" adapters, not only is Mini DisplayPort the wrong signal type, but I suspect that the adapters are one-way, meant to take Mini DisplayPort output from a computer and to convert it to HDIM for a monitor. With the HDMI end plugged into the Mini, they wouldn't work even to hook up a Mini DisplayPort display.
