How can I see what takes so much space on my computer? It is in Documents - but don't know what exactly. I take loads of photos but they don't seem to take that much space. I use Lightroom Catalogs - not sure if that might be the issue.
Where can I start to optimise space? Thanks.

if you are running low on space, you can purchase an external HDD or SSD of sufficient capacity and move your larger files (videos, pictures, documents, etc...) to it. once they are on the EHD, you can simply erase the same files from your internal drive. and, if it's just going to be used for storage, you can use an HDD and save a few bucks over the cost of an SSD. FWIW, i personally keep very little on my internal drive.

additionally, you want to keep ~ 20% of your local drive as free space for proper operation of macOS.

Your Documents at 1.32T are taking up the most amount of space. You need to reduce those by thinning out some of the older unneeded ones or by moving them to an external drive.
System Data includes Time Machine local snapshots. You can remove them with Disk Utility.
I would delete all but the latest snapshot.
System Data should not be using 381GB either.
