I am trying to disable, press and hold for my external keyboard in iPad OS, it makes SSH into my server an absolute nightmare since my VIM bindings do not work… I can’t even type notes on obsidian using the same shortcuts because of the press and hold feature. What is the point of the key repeat setting if press and hold prevents the characters from repeating in the first place!

I don't think there is any way to disable press and hold for letters in iOS, only for MacOS.
The key repeat setting is for those keys that do repeat, like space, delete, and various symbols and punctuation, like !@#$%^&*()_+{}|:"<>?
To ask Apple to change this, you can use
