Re: hearing test crashes on ipad
Seems the AirPods 2's new hearing-aid features became available in those countries where authorities similar to the TGA in USA have already given approval. You may need to check which, if any, of the three new hearing features are available in your country or region:
ie: You can check if your country is listed for:
Hearing Test feature
Hearing Aid feature
Hearing Protection feature (This feature is only available in USA and Canada)

About iPadOS 18 Updates - Apple Support says iPadOS 18.1.1 is now the latest update.

Seems that you can take the hearing test either in Settings, or in the Health app:
As whichever you used has "crashed" the test, you might want to try the other option ?

Above article also says: "If you remove or adjust your AirPods (or if the environmental noise around you becomes loud), the Hearing Test may pause. The test resumes when you put the AirPods back in your ear or when the environmental noise is quiet again".
