For old, unsupported devices, does Apple provide updates (in Software Updates in Settings) to the latest compatible iOS?
I have an old iPhone 5S with iOS 12.5.7. My kids use it for internet/youtube/etc. I am curious if I factory reset it, is it possible to upgrade back to iOS 12.5.7 without using a backup?

Performing a factory reset doesn't downgrade the unit; if it matters, updates to the latest compatible version remain available.
