If you factory reset an unsupported device, can you update to the latest compatible iOS in Software Updates?

For old, unsupported devices, does Apple provide updates (in Software Updates in Settings) to the latest compatible iOS?


I have an old iPhone 5S with iOS 12.5.7. My kids use it for internet/youtube/etc. I am curious if I factory reset it, is it possible to upgrade back to iOS 12.5.7 without using a backup?
