Enabled this to be able to type a bilingual email (with the help of my Vietnamese colleague). Cant seem to disble it now and it ever so often switches on its own from English (Canadian) to Simple Telex.

You should just be able to go to system settings > keyboard > text input > edit > all input sources and use the minus button at the bottom to remove any keyboard you do not want.

Cheers Tom. That was super simple and I missed seeing the +/- signs.

That is easy to do and happens to a lot of people. Apple should really make it more obvious how to edit the input source list.
