I need 52 sheets (one for each week of the year).
At the top of sheet 1 I need it to say "Week 1" and "week ending ...".
At the top of sheet 2 I need it to say "Week 2" and "week ending ..." (seven days after the week 1 date)
Is there a way to do this automatically?

This is possible via script. However, I highly recommend not having 52 sheets or even 52 tables in a Numbers document. That will get unwieldy!
You might want to consider keeping like data together in a table something roughly like this.
You can easily have multiple rows assigned to the same week, and use filters or categories to view subsets, or pivot tables or SUMIFS, COUNTIFS to extract summary data.
