Change default language for Scribble with Apple Pencil

Hi all.

how can I change the default language for scribble. When I try to write a scribble, it always defaults back to German. No matter how many time I change it.

Based in Switzerland so region set to Switzerland, iOS language set to English and preferred languages set to English, Dutch and German (in that order).

When I change the region, the default changes, but I think that is not an ideal workaround because lots more settings depend on that and it is not for nothing that you can set multiple languages and keyboard while keeping your region set to your actual location.
